The recipe can be
multiplied for whatever size crowd is expected.
Cut birds in
half....add your favorite bbq rub to chicken and allow it to marinate for 8-12
smoker for 200 degrees. Smoke the chicken for 4 - 5 hours. After smoking,
prepare a charcoal or wood fire on a grill. Put chickens on the grill and
baste w/ the above sauce every 3-5 minutes, turning frequently. When internal
temperature of chicken is 180 degrees, serve.
chicken may be warmed in oven the next day wrapped in aluminum foil. Just add
a tablespoon of your favorite bbq sauce for moisture to the chicken prior to
wrapping in foil.
